That was the nickname of Fovore Fadda, the man who moved this family from freight carts and hides into cheese: always on the road, as if he walked on embers. A century later, his grandsons still haven’t sat down.

Sardinia holds more sheep than people, and no town has turned that arithmetic into art like Thiesi. Set among the volcanic tablelands of the Meilogu — “the middle place” — it has drawn generations of cheesemakers to its cool cellars and herb-thick pastures.

With Paolino Fadda, the family legacy grows and takes root. Paolino not only made the cheeses with artisan mastery but kept the secrets of their affinage and maturing in the cellars of Thiesi, passing on to his sons the rigor of the craft and the love of excellence.

Salvatore & Maurizio

In 2012, Salvatore and Maurizio turn this century-old family story into a modern, innovative reality. Alongside the great classics of Sardinian tradition, the two brothers introduce exclusive creations such as Ovinsard — a unique green-flecked pecorino able to shake up the market with aromas and flavors all its own.

Paolino’s younger son. He is the soul of the cellar, where he personally follows every stage of maturing, affinage and packaging of our cheeses. Maurizio pairs the rigor of craftsmanship with an infectious cheerfulness.
